32/52 – Oatmeal Cookie Surprise

We had a few minutes before our tour began at the Titanic Experience in Belfast, Northern Ireland and made the decision to preview the gift shop. It was one of those perfect tourist attraction shops that had ranges of items from keeping the peace with the children to native Irish crafts; with prices ranging from  £1 to over £100 for woollens. We took a quick look, made our mental notes of what we definitely wanted to check out, and began our tour.
On coming back down to the shop, the first think that I noticed were the two racks of postcards. After pins, postcards are where my attention goes. Behind those racks were three long shelves that helped to form the checkout line on the opposite side. This side held all manner of small foods – cookies, candy, chocolate, Guinness infused, Bailey’s infused, mints, tins, and the like.

I passed it by about ten times in looking around, and trying to see where my kids had gone, and what they were now begging for, but I kept coming back to the cookies.

I mean, Grace’s Irish Oatmeal Biscuits, made with Irish butter, in the shape of shamrocks – you can’t get much more touristy than that. They were £3. I know I could get biscuits in any grocery, but they wouldn’t be Irish made, shamrock shaped, tourist biscuits.

And £3 wasn’t a bad price for what they were. And the tourist in me really needed to get them.

Instagram, you know.

I bought them, I packed them, I took them home with the rest of my candy.

I finally sat down on a quiet afternoon, and opened the box. Carefully pulling apart the ends, separating the plastic wrapping, I didn’t expect much.

I took a bite.

I sat there, in stunned silence, and took another, smaller bite that I could savor a bit longer than the first.

These were the BEST oatmeal cookies I have ever tasted.

No lie.

The. Best.

I still have two left because I don’t want to finish them.

They’re just the perfect amount of butter, oats, and crunch.

They are truly heavenly.

My recommendation for anyone visiting anywhere in Ireland that sells these is to buy as many as you can squeeze into your suitcase.

Diet Coke vs. Coca-Cola Zero: What’s The Difference? | HuffPost

As I’m drinking Coke Zero, I thought I’d throw my two cents in. First, I only drink Coke Zero when Diet Coke is not an option. That should give you an indication of how much better Diet Coke is: it’s the one that runs out.

Yes, I can taste the difference.
I would put Coke Zero as closer to Diet Pepsi, although it’s better than Pepsi. (Yes, I can taste the difference. So much so that I won’t order Diet Pepsi anymore. I’d rather drink water for free. Sorry Pepsi fans.)
I will drink Coke Zero if it’s my only soda option, especially today when I have to go for bloodwork and can’t get a McD sweet tea (which I drink about once a year).
So, there you have my unscientific analysis.

The Red Apron

So many things that pop into my head with this question, this prompt.

The one thing I probably always, always, always use when I am cooking is my apron. I was never a fan of aprons. I thought they were old-fashioned and silly and ridiculous looking. They are also one size fits all, and one size almost never fits me. I would never wear an apron.

I think I’m conflating two or three Thanksgivings that we hosted. I picture different apartments, different guests, but I also seem to recall only cooking Thanksgiving on my own once. We moved away from our families, about two hundred fifty miles – lower cost of living, not as crowded, and while we usually returned home for some of the holidays, this one year we did not. 

I don’t know what made me buy the apron. In addition to it being one size fits all, it was red; my least favorite color.

A red apron. It was probably literally one of the last things I would ever own, let alone buy.

I first time I used it, it was smooth, and tied easily around my back. I adjusted the neck, and stuck my hands in the large double pockets in the front. I still thought I looked ridiculous, but hey, it was Thanksgiving – wasn’t I supposed to wear an apron as part of the festivities?

I began to cook. I don’t remember what we made other than a very huge turkey that barely fit in our small apartment sized oven. I’m sure there were mashed potatoes and a vegetable. There was probably a sweet potato pie – my favorite and this long ago I probably also followed the recipe more closely, so it was near perfect to my friend’s who taught it to me.

What I do remember is unconsciously wiping my dirty hands on my apron, and after two more times and some long minutes, I realized what I was doing, and I was never more grateful for a kitchen item in my life. That apron saved my clothes.

It was then that I realized that this one size fits all that never fits, actually went a little bit around my hips protecting my dark pants as well.

I nodded my head, and grinned, and I was really glad that I bought this red apron.

In the years since then, that apron gives me the illusion of being a cook. Now, don’t get me wrong, I am actually a good cook. I do food good. Breads. Sweet breads. Ginger cookies. I’m terrible at baking, which is why none of my kids get a homemade birthday cake except my middle guy – he loves cheesecake and asks for it every year, so that’s win-win for everyone.

I can’t remember how many times I’ve left my watch in the pocket; or my wedding rings from baking bread from scratch or my cell phone. The pockets are even big enough to hold my kindle that I use for some of the recipes.

I have actually brought that apron on vacation with me. I’ve brought it to my mother-in-law’s for Thanksgiving dinner to help out in the kitchen. I made three trips to visit friends – once to Denver and twice to Williamsburg, Virginia, and I brought it and used it both times. The first time I also brought frozen ginger snap cookie dough to make when I got there. After the last time, I wore it to polish silver for our special, fancy dinner, and it changed the color of my red apron in some places.

I was sad, but I can’t bear to get rid of it or replace it. After three years, it seems to have gained character from the stain.

The last time I wore it was probably Christmas dinner just a few weeks ago. Roast beef, butter, sticky marshmallows, and I think I spilled a soda.

I’m really glad I had that apron on.

50-46 – Sweet Potato Pie

I met a woman at my first job after college who was from New Orleans. She brought a level of multiculturalism to the curriculum that reflected our clients – the children of the US military. We were in their child development program and I learned more there than I had ever expected.

She held a multicultural night for the staff and we each brought in something from our cultures to share. Food is the best way to come together.

I brought latkes. I have a vague memory of a table filled with fabric covers representing cultures and foods placed carefully on top. What I remember most of all, though was Sylvia’s sweet potato pie. It was the perfect consistency with beautifully browned marshmallows on top and it was amazing. I can practically taste it now.

From that moment on, I made that sweet potato pie for my family’s Thanksgiving feast. The only problem was my mother refused to believe that it was a dessert, and she served it warm and as a side dish. I could never convince her otherwise.

That was twernty-four years ago and it has remained a family tradition. I make it, not only for Thanksgiving but also for Christmas and Rosh Hashanah, sometimes even Passover. It is a family favorite. The last couple of times, I haven’t wanted all the bother of making a pie, so I’ve used the recipe, or my version of it without the graham cracker crust and called it a sweet potato casserole. It tastes just as good.

Warm or cold, side dish or dessert, I could eat this every day.

Here’s my variation of the recipe that I’ve used the last decade or so, and will be making it to bring to my sister-in-law’s on Thursday. This is our first year without my mother-in-law and as tough as that is going to be, I want my kids to have something that they’re used to having at her house.

Cook one large can of sweet potatoes or cut yams. Bring it to a boil and then drain. Mash it smooth and add one stick of unsalted butter. Mix thoroughly.

Mix in about 1/4 cup of brown sugar. Add more if you like it sweeter.

Add cinnamon and nutmeg, about a teaspoon each, although I don’t really measure. I add it directly by grating over a microplane.

Pour into a pie crust or a casserole dish and cover completely with mini-marshmallows. If I use a crust, I use the Keebler graham cracker crust that serves two extra people.

Put in a 350 degree oven and bake for about 30-35 minutes. Take out when the marshmallows are melty and golden-browned.

If it’s a pie, let cool a little and cut with a cake/pie slicer. If casserole, scoop out with a large spoon.

Personally , I like it right side up, with the marshmallows on top. My family doesn’t usually care, and it drives me crazy.

50-41 – Salisbury Tea

​Some memories are clearer than others. When I think of Salisbury, I remember several bits rather than a cohesive narrative. I have vague images of people and places and really strong feelings evoked by the smell of rain on stone. Simply the mention of the Cotswolds region and I think lovingly of the hostel warden who let us in early because of the freezing air. He showed us his books on the area and we talked with him for what seemed like hours although it was probably closer to minutes. I can picture Kathy and I poring over the books in what I remember being a study with overstuffed chairs and shelves of books. It was probably less of a study and more of a nook but it is in my mind’s eyes as from an Austen novel.

I have no memory of coming off the train and walking on a regular sidewalk. Our bags were heavy. We’d just left London and I already had an extra bag. In some ways, twenty odd years later would be much easier with my own car.

The street was narrow, going hurriedly but clumsily over the cobblestones and through the slate colored grey stone archway that matched the sky. Salisbury held everything from prehistoric and Druidic to medieval and Christian to modern with that extra touch of living in a British comedy. All there for tourist and native alike, slight eye roll and wondering if this was real or if it was done as pantomime for our benefit.

I take pictures of everything so it boggles my mind that I do not have a photos of the actual medieval clock in the CAthedral. It is possible that photographs weren’t allowed. It’s possible that the picture was blurry and lost to the annals of a box of college things that will never be seen again. I do remember amazement, thought, and I recall sitting on a wall near the Cathedral – I have a photo of a flowering tree in January from there so it must be true – and we eating peanut butter spread on crackers, although I think it was either Melba toast or mini bread squares the size of crackers – non-perishable, easy to carry and thrifty. Let’s be hone now, frugal or cheap is a more appropriate designation.

What stands out most vividly, besides scaring another hosteler that evening while watching Poltergeist, was the wacky tea shoppe that Kathy and I wandered into. There were so many things on the wall, it was hard to miss the tiny flowery wallpaper. There were small round table with two or three chairs. I think they were metal, like patio furniture rather than wood, and they were all white. I feel as though a doily factory exploded in this shoppe. People were there, chatting quietly, sipping tea, adding milk, dabbing creme onto scones, the click of the spoon hitting the tea cup unmistakable and nearly constant.

At the back of the shop was a counter where you got your order and behind the counter were three old women. Ancient would be more apt. They were all quite deaf or extraordinarily hard of hearing. Although they didn’t have one, it would not have surprised me one whit if they had one of those ear trumpets that you would put into your ear and had someone scream into.

They were shouting orders back and forth and repeating as necessary because of the hearing. It was very much like the Where’s the Beef commercials.

As Americans, we were already loud, but not quite loud enough for this place.

I’d like a tea with milk please.

What?

Tea. With milk, said a little louder.

What?

One more time.

She turned to the lady behind her, in the more kitcheny area and repeated my order.

What? came the reply from the back.

The first woman repeated it.

What?

A third woman back there repeated it even louder and was met with a silent nod as tea kettles were poured and prepared and given to us on a tray. We must have paid but I don’t actually remember paying. I also don’t recall if we got anything to eat with our tea.

We sat and sipped and listened in astonishment as our conversation was repeated with the customers who came after us. We grinned occasionally at the absurdity of it all.

It was so perfectly, stereotypically British that I would not have been surprised had Mrs. Slocum come out of the back complaining about her day.

I don’t remember what was upstairs – there was a little shop, but I do remember going up the narrow stairs and then coming back down relatively quickly. We slid past other customers coming in, back onto the narrow cobbled walkway, under the stone arch that had been there since before America was a nascent thought and back to the hostel; or more likely to the hostel for the first time after our very British sustenance. Tea cures all ills, and with its special powers we were able to walk the rest of the way to the hostel where we would stay the night and then continue west by train through the lush green countryside bordered by grey sky.

Recipe – Jacket Potatoes

Jacket Potatoes

I will usually use 1 1/2 large potatoes, but use your judgment for your appetite.

Take the potatoes, wash, dry, and poke holes on four sides with a fork. Bake for 1 hour at 400*.

When the potatoes are ready, cut them in half. Put two or three halves in a cereal or soup bowl.

Keep the potato flesh in the skins, but mash it a little with some butter.

Add to the potato whatever you like. my personal preferences are:

chopped up chives,

bacon pieces (real bacon, not bits),

shredded cheddar cheese (or your favorite flavor), and

a dollop of sour cream.

Jacket potatoes are very versatile. You can smother them with chili, leftover hamburger meet, pasta sauce with meat (I’d recommend mozzarella for that one), broccoli, beef stew leftovers. The options are endless.

They make a great lunch, and pair them with a hearty salad, and they can be very filling for dinner.

Recently, we had jacket potatoes for dinner. We’d run out of groceries except for a 5lb. bag of potatoes, and some odds and ends in the fridge. No one wanted to make dinner. When I suggested potatoes for that dinner, my husband thought I was being crazy, but since he didn’t have to make the meal, he went along with it.
It’s funny how the simplest thing can seem like the best, most wonderful, unique food on the planet. The first time I had a potato as a main dish like this I was in England in the eatery at Warwick Castle. My friend and I were on a three week adventure through the UK, and we were watching our pennies. We still had another week to get through with the cash we had on hand, and as any tourist place, even twenty-odd years ago, the castle’s food was expensive.

Looking though the menu, we both chose this odd but very interesting sounding thing called a jacket potato. It really was an oddity. A baked potato with stuff in it. It was huge. It was like the size of two potatoes with what looked like four ounces of cheddar cheese on top. I loved it. I came home that spring and started making them for my lunches.

Many years later, upon returning to North Wales, I visited another castle. This one was Caernarfon, 13th century built by Edward I to subjugate the Welsh. They had a gift shop, but no place to eat on site. It didn’t much matter; there were enough places to choose from in the small town.

I ended up in an alleyway, called Hole in the Wall. Too narrow for a car, but perfect for walking or bicycling. There were several places along the small lane, and at least three restaurants all on the same side of the lane, and I chose the cafe across from where the bell tower used to be. The stones that made up the tower and surrounded the bell were still there but half of the stones were missing so one side was open.

Appropriately named The Bell Tower Cafe, it was a tiny place, maybe ten tables, mostly filled with regulars, a variety of ethnicities all speaking the lyrical Welsh language. They were all getting a good, hearty British breakfast. It looked amazing, but I had already eaten breakfast at the hostel, toast and jam. I watched as the steam rose from the white tea someone had ordered. In searching over the menu, I discovered that old favorite from Warwick – the jacket potato. I had that big potato covered in cheddar cheese with a salad and a soda, and it was delicious. I went back the next day and had the exact same thing.
