They look hard, but they’re Simple, Easy, and Delicious.

We had a roast beef dinner and the next night we had Shepherd’s Pie. For lunch on the third day, this was the leftover from the dinner, so I made a quick pie for the microwave.

Leftover meat & veggies cut up in small chunks, gravy, a touch of Worcestershire sauce, cover with leftover mashed potatoes, cheddar cheese, and microwave for 2 minutes. Crumbled French’s fried onions on top.

Simple, easy, and delicious.

Boneless center cut pork chop, cooked in a tiny bit of olive oil in the pan until no longer pink. Placed on baking sheet with Major Grey’s Mango chutney spread liberally on top and broiled for five or so minutes. Keep an eye on it. Leave it if you’ll want it crispier. Mashed potatoes the usual way. Frozen corn boiled with a pinch or two of sugar.

Pot roast.

This will seem complicated but it is really simple. Take an oven cooking bag and place a bottom round roast inside. Wash and cut up one potato per person or more if you want leftovers. Cut two onions in quarters. Pour in a bag of frozen baby carrots.

Cover the meat with one packet of Lipton onion soup mix. Add two to four cups of water. Tie the bag. Poke holes with a knife. Put in oven and bake at 350 for  20 minutes per pound (longer if you want it more tender).
